Everyday Vegetarian Fried Rice

Give this easy vegetarian fried rice a try - a great recipe for the whole family to enjoy! It's nice and simple, suitable for everyone, and includes loads of veggies for kids and adults to stay healthy.

You'll need

  • 500g of leftover rice (or cooked and cooled rice)

  • 50ml olive oil

  • 2 large eggs

  • 50g red onion, diced

  • 100g white cabbage, evenly sliced

  • a few sliced spring/salad onions

  • 5g salt, 5g black pepper

  • 2 peppers (red or green), diced

  • 1tsp (5ml) light soy sauce

  • 1tsp (5ml) sesame oil


  1. Prepare all of your ingredients, (be extra careful when cutting and chopping). Your rice should be cold and dry to the touch, whether it’s leftover or cooked just for this recipe.

  2. Grab your non-stick frying pan (or wok if you have one) and bring to a medium-high heat.

  3. Pour your oil into the pan, swirling the pan to make the oil cover everything evenly. The oil is ready when it’s shimmering and wavy, but NOT smoking.

  4. Crack and beat your eggs in a small bowl, then carefully pour them into the hot oil. Use your wooden spoon to scramble the eggs as they cook.

  5. After the eggs have cooked, add the onion, cabbage and peppers, stirring in between each ingredient until everything is nicely mixed.

  6. When everything is getting nicely cooked, add the cooled rice. Mix well.

  7. Add the salt, pepper, soy sauce and sesame oil, and stir well to coat everything evenly. Let the rice cook with the ingredients - smells good doesn’t it!

  8. Add some of the chives, mix, and then turn the heat off.

  9. Spoon your rice carefully onto a plate, and top with the remaining chives.
